Once you try these VEGAN chocolate chip cookies, you will never need another cookie recipe! These melt-in-your-mouth cookies are crispy around the edges, with soft, gooey centre, and studded with pools of melted Hu chocolate for the ultimate chocolate cookie experience!

You will need
  • 100g vegan butter (softened)
  • 60g soft light brown sugar
  • 60g caster or granulated sugar
  • 2 tsp vanilla
  • 2 Tbsp non-dairy milk alternative
  • 200g plain flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 120g Hu Simple Dark Chocolate, chopped
  • (Optional) flaky sea salt

Step one

Beat the butter and both sugars until pale and fluffy, about 2-3 minutes.

Step two

Add vanilla and milk alternative and mix again.

Step three

Add the dry ingredients and chopped chocolate and fold together until just combined.

Step four

Scoop cookie dough into balls and place on a lined baking tray.

Step five

Bake cookies at 170C for 10-11 minutes, rotating the baking tray half way through.

Step six

Remove from the oven and sprinkle with some flaky sea salt (optional).
